Spinach Salad, Flaxseed Oil Delight

SPINACH SALAD, FLAXSEED OIL DELIGHT

This is one of my favorite recipes because it's chock full of antioxidants, contains only excellent fats (in the flaxseed oil and the nuts), helps to maintain your weight, and is good for your heart. What more should we expect from a salad? Oh yes, great taste!

Spinach is an antioxidant and it helps to fight against stomach, skin, breast, prostate and other cancers. It is also high in carotenes which help with eyesight. The vitamin K in spinach helps to prevent osteoporosis. Be sure to add chopped spinach to your homemade soups.

Here's a little tip: Researchers found that feeding aging laboratory animals spinach-rich diets significantly improved their learning capacity and motor skills. So, we've got a bunch of smart, agile aging rats in our labs. Interesting.

Serves 2

2 cups baby spinach

1 cup arugula

1 tablespoon raisins

1 tablespoon chopped walnuts

1 cup cherry tomatoes

Dressing

2 tbsp organic flaxseed oil

1 tbsp balsamic vinegar

I clove minced fresh garlic

1/2 tsp Dijon mustard

Pinch of salt

Freshly ground pepper to taste.

Method

Wash spinach and arugula very well and place in a large bowl.(Of course, you can buy the prewashed leaves, but some reports have warned that they aren't necessarily washed all that well, and may contain bacteria. It's up to you if you want to take your chances.) Mix dressing ingredients in a separate bowl. Just before serving, drizzle the desired amount of dressing over the salad, and then add the raisins and walnuts and tomatoes.
