Low Carb Thai Beef Salad

I love the taste of this salad and I love it that it is healthy too. Beef is important for your health because it is packed with iron. I know all of you vegetarians out there will argue that you can get your iron elsewhere, and you are right, but my personal preference is to eat lean beef mostly because it tastes good.

Many people swear by a low carb diet and they often don't distinguish between good carbs and bad carbs. A low good carb diet will add to your menopausal symptoms because when you are unhealthy your hormone levels will go out of wack and you'll feel it. It is very easy to know the difference between good carbs and bad, just think of healthy food in general and unhealthy food. The healthy food will always have good carbs in it.

Low Carb Thai Beef Salad Serves 4

Beef ingredients

12 cups of water
4 pieces of beef tenderloin
4 bay leaves

Salad

2 cups boston lettuce salad leaves
1 cup watercress leaves
1 cup fresh mint leaves, chopped
1 cup fresh cilantro leaves, chopped (optional)
½ red onion chopped fine

Beef dressing

¼ cup extra virgin olive oil
¼ cup freshly squeezed lime juice
1 tbsp soy sauce

Method

In a large pot bring 12 cups of water to a boil. Add bay leaves and beef tenderloin. Cover and let simmer for 20 minutes. In the meantime, prepare the salad by combining all the ingredients. Place two handfuls on each plate.

When the meat is done, remove from the pot and cover and let stand for 15 minutes.

Slice the beef tenderloin into strips. Combine beef dressing ingredients in a medium bowl. Add the beef tenderloin and toss well.

Place the beef tenderloin neatly on top of the salads on the plates. Voila. Enjoy.
