Here is a delicious avocado spinach salad for you to enjoy.

Avocado used to have a bad name because of its high-fat content. The pendulum has completely swung on this one. Now all the experts accept that the fats in avocadoes are incredibly healthy and satisfying. Add spinach to the mix and you have one fabulous menopausal salad.

The avocado is a rich source of monounsaturated fats for heart health and it helps to reduce the bad cholesterol levels. It also has vitamin C, vitamin E, vitamin B6, folate, iron, magnesium, potassium, and antioxidants which protect against the risk of cancer.

Choosing the perfect avocado can be tricky. Be sure to pick one with unblemished skins without any soft spots. The flesh should yield slightly when pressed with the thumb.

I often find the avocados in my local supermarket are too hard to eat. To hasten ripening I put them in a paper bag with a banana. They soften quite quickly and nicely.

I made this recipe to serve one, because sometimes we should take the time to just take care of ourselves. Okay...double, triple or quadruple it if needed for your family.

Ingredients

½ avocado, sliced
1 handful of chopped walnuts
¼ cucumbers sliced
1 cup of baby spinach
A small handful of fresh basil

Dressing

½ tbsp white wine vinegar
2 tsp extra virgin olive oil
Grated lemon zest
¼ clove of minced garlic
Pinch of sea salt
Freshly ground pepper to taste

Method

Place the washed baby spinach and fresh basil in the bottom of your bowl. Neatly spread the other ingredients on top as in the picture. Mix the dressing and pour on top.
